Lazy cabbage rolls. Lazy cabbage rolls in the oven Lazy cabbage rolls for children from one year old

Children often eat away the stuffing of cabbage rolls, leaving the cabbage on the plate. But it is very useful to throw away. And in the diet of our children in winter there is a shortage of vegetables. That’s why we suggest preparing lazy cabbage rolls for the picky ones.

What you will need:

  • fresh cabbage – 300 g;
  • minced meat (low-fat pork, homemade, chicken with pork) – up to 500 g;
  • one fresh carrot (more is possible);
  • bulb;
  • 2 eggs;
  • 100 gr. rice;
  • a pinch of salt;
  • vegetable oil for frying;
  • sour cream up to 18% fat – 50 ml;
  • sprig of dill - to taste.

Cooking steps

Let the rice cook in plenty of water. These can be dry or steamed grains. You can pour boiling water over the flakes and let them stand (swell) for about 15 minutes. The younger the child, the weaker he chews and the more uniform the stuffing for cabbage rolls should be. While the rice is cooked until fully cooked, finely chop the onion, carrots, and dill.

Thoroughly mix the minced meat with eggs and salt, then add the chopped vegetables and, stirring again, let stand for a few minutes.

Finely chop the cabbage. If the child is under 3 years old, it is better to grate it on a beetroot grater. To do this, you will need to choose a denser head of cabbage.

Drain the juice from the bowl with the minced meat. Add cooked rice and shredded cabbage to the container. Mix well.

Form small cutlets from the resulting stuffed cabbage mixture, squeezing out excess juice, and place them on a flat frying pan heated and coated with vegetable oil. Fry on both sides until a crust is obtained (it will be darker the more carrots and onions in the minced meat and the less oil).

Dilute the sour cream with two parts of warm water, pour a little onto the bottom of a deep, thick-walled saucepan or heat-resistant dish (for the oven or microwave). Place tightly fried cabbage rolls, pouring sour cream sauce over them. Cover with a lid and simmer for 20 minutes over low heat on the stove, in a preheated oven, or in the microwave at medium power.

Select the side dish for cabbage rolls according to age. For children under 2 years old, sour cream or a sauce made from it is preferable; for children under 3 years old, you can add fresh or stewed tomatoes or bell peppers. Children over 3 years old are allowed to pour tomato paste over the cabbage rolls.

Option 1: Classic recipe for cabbage rolls like in kindergarten

With minimal deviations caused solely by the characteristics of home kitchen appliances, this recipe is copied from the standard one, designed for feeding preschool children. Use any broth; potato or other vegetable broth is also suitable.

Ingredients:

  • veal without fat - 500 grams;
  • kilogram of white cabbage;
  • half a glass of large dry rice;
  • spoon of flour;
  • two onions - 180 grams;
  • one hundred grams of carrots;
  • vegetable oil - two tablespoons and the same amount of tomato paste;
  • a quarter glass of sour cream;
  • 50 grams of breadcrumbs;
  • butter, butter - 25 grams;
  • one and a half glasses of broth;
  • salt.

Step-by-step recipe for cabbage rolls like in kindergarten

Cut off all membranes and remnants of cartilage, if any, from the veal. Dissolve into small pieces and grind with a meat grinder.

Chop the cabbage into smaller pieces, peel the onion and also cut into small slices. Grind the cabbage and half the onion mixed with the minced meat and stir. If the mass looks a little rough, pass through the meat grinder again.

Sauté the second part of the onion and the carrots, grated into coarse shavings, in a spoonful of butter. Rinse the rice, do not rinse for a long time. Boil the cereal until almost done in a small amount of brackish water and pour it into a colander. When the moisture has drained and the rice has cooled, stir it into the minced meat and add salt to taste.

Moisten a heat-resistant dish with oil and place sautéed vegetables on the bottom. We form small, round meatballs from the minced meat and bread them in breadcrumbs, place them in a mold so that they do not touch.

We raise the temperature in the oven to 210 degrees, put our “stuffed cabbage rolls” in there for a quarter of an hour, allowing the top layer to warm up and the breading to set into a crust. Add sour cream, tomato and a slice of butter to the heated broth, add flour and stir. Pour the thick, lump-free sauce over the cabbage rolls and simmer for 50 minutes, lowering the temperature to 180 degrees.

Option 2: Quick recipe for cabbage rolls like in kindergarten

Are you planning to cook for an adult group? Believe me, few will refuse such a treat and it’s not a matter of nostalgia. The dish is light and satisfying, since you can handle spices a little more freely, add a little pepper, pour ready-made portions with rich sour cream, and offer spicy tomato sauces separately.

Ingredients:

  • four hundred grams of lean minced meat;
  • 700 grams of cabbage leaves;
  • rice - half a glass;
  • large carrots and large onions;
  • pepper - on the tip of a knife and “Extra” salt.

How to quickly cook lazy cabbage rolls like in kindergarten

Cut the onion, peeled and washed, into slices no larger than a quarter of a ring. Grate the carrots with a coarse grater, into strips the same length as the onion pieces.

Rinse the cereal until the cloudy whitish sediment disappears from the water. Soak directly in a colander and leave it like that, the water should be cool. Heat a spoonful of oil in a frying pan and put vegetables in it, sauté over low heat until noticeably softened. Add salt to them so they release more juice.

Knead the minced meat in a bowl, put it in the frying pan and continue to break up the lumps that form during heating with a fork. Right now, very modestly, just for a light aroma, add a small pinch of pepper. Stir until the color of the minced meat completely changes to white.

We chop the cabbage into thin strips; if the slices are longer than four centimeters, we shorten them. We spread it with the minced meat, add rice there too, from which you need to first drain the water. Salt, cover with a lid, leave on low heat.

You will have to check the readiness of the dish periodically, at the same time stir the mass and add a little water or broth. Do not add more than a quarter cup and stir immediately, pour only on top of the food. By the time the rice is completely cooked, there should be no visible water at the bottom of the pan. Serve the dish by gathering in a mound and topping with sour cream. To form portions, it is convenient to use a ladle, into which we scoop the required amount of cabbage rolls and lightly press them with a spoon.

Option 3: Juicy cabbage rolls like in kindergarten

If you are not preparing for children, and the dish will be served to guests who have long left the walls of the kindergarten, lightly brown the onion and cabbage separately in hot oil, then mix and simmer briefly together. Be sure to pepper, but very lightly. These recommendations are not suitable for a children's dish; cook according to the recipe exactly.

Ingredients:

  • five full spoons of rice cereal;
  • white cabbage - six hundred grams;
  • white, juicy onion;
  • 400 grams of boiled chicken;
  • half a spoonful of tomato;
  • salt and small bay leaf

How to cook

Chopping cabbage requires a particularly careful approach. First, dissolve it into thin strips, inspect and remove all thickenings, then cut it with a knife to a size of no more than two centimeters. Chop the onion in much the same way as the cabbage leaves. Mix both vegetables and place in a heated pot with about half a glass of water boiling at the bottom. Simmer, stirring, on low heat until all moisture has evaporated.

Boiled white chicken meat, without fat and skin, grind twice in a meat grinder. Sort the rice and rinse twice in a colander. Stir the vegetables in the pot one last time, adding the tomato and add a little salt. Press with a masher and spread the cereal over them in an even layer, do not mix. Pour hot water down the side, level with the rice, cover with a lid and simmer on low heat for a quarter of an hour, then, still without stirring, lay out a layer of ground chicken.

Simmer slowly, check the readiness of the cereal at ten-minute intervals, and add water by spoonfuls if necessary. Stir only when the rice is completely cooked. It is not advisable to keep the dish covered for a long time; serve immediately and do not forget about sauces for older eaters.

Option 4: Stuffed cabbage rolls like in kindergarten from chicken in a slow cooker

If children have long left kindergarten age, but periodically demand to reproduce dishes familiar from childhood, do not refuse them this. Treats developed by professionals dating back to Soviet times may be inferior to modern ones in taste, but, without a doubt, they will benefit from benefits.

Ingredients:

  • a full glass of tomato juice;
  • 350 grams of chicken;
  • rice, long grain - five tablespoons;
  • large onion;
  • 150 grams of cabbage;
  • highly refined oil - two tablespoons;
  • large, sweet carrots;
  • spoon of salt.

Step by step recipe

Peel the onion and grind it together with the chicken meat. When disassembling chicken, remove the skin and fat; they are not used in the children's menu. Coarsely grate the peeled and washed carrots, remove the top leaves from the head, cut the rest into quarters and finely chop the required amount with a knife.

Grease the multicooker bowl generously with oil. Place minced meat and cabbage in it, add washed rice, and add carrots. In the absence of tomato juice, dilute one and a half tablespoons of paste in a glass of boiled water, pour into the bowl.

Add salt to the ingredients collected in the slow cooker; if the dish is intended for children, be especially moderate and do not use spices. Select the stewing function from the control panel and lower the lid. Set the timer for forty-five minutes, but a quarter of an hour before the cycle stops, check to see if there is a need to add water.

We simmer the finished darlings for another quarter of an hour while heating. Please note that it is best to serve them hot, but not reheated.

Option 5: Delicious cabbage rolls like in kindergarten in a frying pan

The choice of meat for baby food is relatively limited. In addition to light chicken, young beef is usually used. Boil it slowly in a small amount of water, adding more as it boils.

Ingredients:

  • 450 grams of cabbage leaves;
  • three hundred grams of lean boiled veal;
  • two hard-boiled eggs;
  • spoon of tomato;
  • two medium-sized onions;
  • vegetable oil;
  • a little less than half a glass of rice;
  • salt, fine.

How to cook

Rinse fresh cabbage and shake off moisture from the leaves; it is better to disassemble the head of cabbage into separate leaves or purchase it in the form of separate leaves. We will try not to overcook the cabbage on the stove, so we will cut off the thickenings on the leaves. We roll or stack the remaining soft parts of the cabbage and cut them, first into strips, then into squares. Having fluffed the resulting “salad” with our hands, we review and chop the large parts; we need slices no longer than one and a half centimeters, with half the width.

Cut the onion into checkers - square pieces of half a centimeter in size. It is convenient to do this by first cutting the head in half, and then lengthwise and crosswise. We brown the onion in oil, but very lightly, literally until the first golden brown on the edges of the slices. Immediately add the cabbage and mix the vegetables, lower the heat slightly and add some salt on top. Push the cabbage right away, and then again, about five minutes after the start of stewing.

Peel and rinse the boiled eggs, chop them finely and cover them with a saucer - we will add them to the finished dish. Grind the veal and set it aside for now, first wait until the cabbage is half-ready.

There is no need to rinse the cereal, just place a colander with it under running water and rinse it a little. Place and stir the tomato into the softened cabbage, crush it again and place a layer of cereal on top. Pour in half a glass of boiling water and simmer under the lid for about ten minutes, then spread the veal in a layer. Add a little more water and cook the rice until cooked on low heat. Only after this add the eggs, mix and taste for saltiness.

There are people who shudder to remember what they were fed in kindergarten. But there are also those who liked such food. Take the cabbage rolls, for example. What was served to children in kindergarten did not require the effort of unwrapping the delicious filling from the cabbage wrapper. It was under And at the same time, among the rice and minced meat, there was cabbage. How delicious it was!!! For those who are nostalgic for years gone by, we offer a recipe like in kindergarten. This is a tasty and healthy food, approved by Soviet GOST for feeding preschool children. But the recipes sometimes varied significantly as a result of the culinary fantasies of the head cook.

The classic Polish dish involves the use of hunting sausages. In addition, bigos is seasoned with mustard and horseradish. It is clear that such a recipe for lazy cabbage rolls, like in kindergarten, must be adapted to the tastes and needs of a small child. Therefore, when preparing bigos, we will replace smoked meats with minced pork. This will make the lazy cabbage rolls more tender. Cut two onions into small cubes and grate the carrots into large shavings. Sauté them in vegetable oil until golden brown. Wash four tablespoons of rice and boil until tender. First shred half a fork of cabbage into strips and then cut into squares. Mix it with grams of raw minced meat. Add rice porridge, frying, two eggs, salt and ground black pepper. Place a frying pan with a few tablespoons of vegetable oil on high heat. Form cutlets from a well-mixed homogeneous mass and fry on both sides. There is no need to bring it to full readiness, just wait until it turns golden brown. Place the lazy cabbage rolls in a deep pan. Pour in the sauce, which we prepare from two glasses of tomato juice and five tablespoons of sour cream. Bake for about 50 minutes in the oven at 180°C.

Lazy cabbage rolls with bell pepper

Fry the cabbage along with grated carrots and finely chopped onions. This recipe for lazy cabbage rolls, like in kindergarten, recommends using one sweet one along with other vegetables. We will wash it, remove the stalk with seeds, and cut the pulp into small pieces. This recipe calls for more rice. Per kilogram of cabbage requires two and a half cups of cereal, and two onions and carrots. Boil the rice until half cooked. Mix the porridge with 600 g of minced meat, season with salt and spices. Place half of the fried vegetables and cabbage on the bottom of the pan. Place all the rice mixed with minced meat on top. Cover with the remaining cabbage. Now let's make the sauce. Tomatoes in their own juice (400 g - a small jar) cut into pieces. Season them with spices as needed. Sprinkle with fresh chopped herbs, add three tablespoons of sour cream and a small amount of tomato juice. Pour this sauce over the lazy cabbage rolls. Cover the pan with foil and place in a hot oven for 45 minutes at 220°C.

Kindergarten lazy cabbage rolls for very young children

Although cabbage is not recommended for children under one and a half years old, this recipe is still designed for feeding in a nursery. First, chop the onion very finely. In the same way we cut a small cabbage fork. Pour boiling water over everything and leave for five minutes, after which we drain the water. This simple technique helps get rid of bitterness, which is so harmful to young children. In addition, cabbage will become more elastic and will be easily digested by a fragile stomach. Boil four hundred grams of chicken breast and grind through a meat grinder. Pour some water into the bottom of the saucepan and put a piece of butter. When it melts a little, add cabbage and onion. Simmer under the lid, stirring occasionally, over a low flame. Salt and throw in a bay leaf. Then pour five spoons of washed but uncooked round rice on top. Do not stir, just add enough water to cover the rice. Simmer for another quarter of an hour. Now add minced chicken breast. After five minutes, you can stir and add water if necessary. When the rice is completely cooked, add four hard-boiled and finely chopped eggs into the dish.

Stuffed cabbage rolls, like in kindergarten: recipe with pumpkin

First, boil two-thirds of a glass of round rice. With half a fork of cabbage we will do the same as in the previous recipe. While the water is cooling, coarsely grate 300 g of pumpkin. Eight hundred grams of veal and an onion are passed through a meat grinder. Salt and pepper the minced meat, add rice porridge, strained cabbage and pumpkin. We form cutlets from this mixture, bread them in flour or breadcrumbs and fry them a little over a high flame until they are covered with a crust. Line the bottom of the mold with cabbage leaves. Place the cutlets on them in a dense layer. Prepare the sauce in a separate container. Mix sour cream (400 g) with four tablespoons of tomato paste. We dilute them with half a glass of water. Pour the sauce over the lazy cabbage rolls and bake at 200°C for forty minutes to an hour.

“Stuffed cabbage rolls” with white sauce

It has been noticed that children prefer soft, creamy gravy. Therefore, we will replace the traditional tomato sauce with bechamel. First, let's grind half a kilo of beef, an onion and 200 g of cabbage through a meat grinder. Salt and pepper the minced meat, beat in one egg. Next - as usual: form cutlets, bread, fry, put in a mold. Prepare the sauce. To do this, rub the carrots with large shavings and cut the onion into cubes. We do the roasting. When the vegetables are browned, transfer them to a plate. Melt 50 grams of butter in a frying pan, add one and a half tablespoons of flour, fry until golden brown. Gradually add half a liter and stir until no lumps remain. Boil for a couple of minutes. Now return the carrots and onions to the pan. Warming up. Pour sauce over lazy cabbage rolls. Kindergarten recipes require lengthy cooking to avoid the risk of infection with worms. Usually the minced meat is baked in twenty minutes, but in children's canteens the cooks keep the dish in the oven longer.

Combine rice, meat, cabbage and onions. Salt and pepper the mixture. Dipping our palms into ice water, we form oblong cutlets, like lula kebab. Roll them in breadcrumbs and fry in heated vegetable oil on all sides. Then we put the ruddy products into a mold, fill them with some sauce and put them in the oven for three quarters of an hour.

This recipe uses an egg and carrots. The dish itself is prepared in a saucepan or in a deep frying pan. Pass the peeled onions and carrots through a meat grinder. Closer to one year, the baby can be introduced to food from the common table. Of course, not all dishes are good for a child’s delicate digestive system, and a small number of teeth also reduces the “assortment.”

All of them are rich in iron and are well absorbed. To make the dish tender, the meat should be minced twice - this will make the minced meat more uniform.

For dishes such as lazy cabbage rolls, rice varieties that cook well are suitable. Due to the high starch content in rice, it is very filling. For children's menus, rice should be washed several times and soaked in cold water for 15-20 minutes before cooking.
