Chaga is a perennial mushroom from the tinder family that appears on the trunks of many deciduous trees: birch, alder, rowan, beech, elm, maple. It is important that birch sap is fresh, natural and correctly collected. To obtain a healing and safe drink, the liquid is collected in early spring, preferably in mid-March. To do this, choose an adult birch tree with a developed crown and black and white bark. First, check for juice with an awl. If drops are released from the trunk, the sap can be collected. To collect, carefully drill into the bark to a depth of two centimeters. Such a hole will subsequently close and will not harm the tree.

Insert a tube or groove into the hole formed, which leads into a previously prepared container. The juice will flow down the tube into the container. Harvesting begins in mid-to-late March and is completed by early to mid-May. Collect sap from different trees and do not take more than a liter of liquid per day from one birch tree! Otherwise, the plant will weaken and die. After collecting the sap, be sure to seal the hole with wax, then the tree will quickly recover and will not be damaged.

After collection, it is recommended to drink the juice immediately that day for three to four hours, otherwise the drink begins to lose its beneficial properties. But you can store the product in a tightly closed glass jar in the refrigerator for up to three days. To get juice all year round, use canned or frozen juice.

For canning, heat the collected liquid to 70-80 degrees above zero, pour into glass jars and seal. Store the product in a dark and cool place. Alternatively, you can freeze the juice. To do this, pour the liquid into a special freezer bag. When it thaws, the taste and beneficial properties will remain the same. Moreover, the juice can be drunk at any time of the year.
